摘要
生姜中含有丰富的活性物质,具有良好的抗菌及抗氧化能力。本文采用超临界CO2萃取技术提取姜精油,以抗氧化性和抗菌性为衡量指标,确定最佳姜精油种类,并以聚乳酸为成膜基质,通过红外光谱、差示扫描量热、扫描电镜、机械性能和抗菌试验对复合膜的相关结构和性能进行表征,研究开发新型、环保、安全、应用前景广阔的具有抗菌抗氧化能力的食品活性包装材料。研究表明,山东和云南姜精油抗菌及抗氧化能力优良,且当姜精油添加量达到1%时,复合膜对受试菌有较好的抗菌效果。此外,姜精油的加入能明显提高复合膜的穿刺强度,但姜精油与聚乳酸基体之间只是简单的物理共混,无相互作用发生。该方法通过简单的溶剂蒸发制备了含姜精油的抗菌抗氧化材料,为姜精油的综合利用以及新型食品活性包装的研究开发提供了实验依据及新途径,具有潜在应用价值。
Ginger is rich in active substances,which has good antibacterial and antioxidant capacity.In this study,ginger essential oil(GEO)was extracted by supercritical CO2 extraction technology.The antioxidant and antibacterial properties were characterized to determine the best type of GEO.Then,polylactic acid(PLA)was used as the film-forming substrate to develop new,environmentally friendly,safe,and promising food active packaging materials with antibacterial and antioxidant capabilities.The structure and performance of PLA-based composite film containing GEO were analyzed by FT-IR,DSC,SEM,mechanical and antibacterial test.The results showed that GEO from Shandong and Yunnan had excellent antibacterial and antioxidant activities.The composite film containing 1%GEO could achieve better antibacterial effect against test bacterial.Moreover,the addition of GEO could obviously increase the puncture resistance of the composite film.However,the FT-IR spectra suggested that there was only a simple physical blend between PLA matrix and GEO,with no interaction occurs.Overall,the antibacterial and antioxidant materials containing GEO were prepared by solvent evaporation,which provided experimental basis and new approach for the comprehensive utilization of GEO and the development of new food active packaging.
