3种食用菌菌粉在运动员训练及体能恢复中的作用 被引量:2

摘要 食用菌不仅具有丰富的食用价值,而且内含丰富的维生素和矿物质元素。针对运动员日常训练和体能恢复的需要,深加工香菇(Lentinus edodes)、杏鲍菇(Pleurotus eryngii)、金针菇(Flammulina velutipes)3种食用菌并获得菌粉产品。通过食用3种食用菌菌粉和对照组的试验对比,对体重、延长训练时间、血清乳酸含量、乳酸脱氢酶(LDH)和磷酸激酶(CK)含量进行指标分析。结果表明,在延长运动时间上杏鲍菇对运动员的影响最大,运动员训练时间与对照相比差异极其显著(P<0.01),金针菇虽然对减少运动员血液中的LDH含量有作用,但是作用效果并不明显,香菇中LDH、CK两项指标的含量均减少约20%,杏鲍菇中LDH含量减少33%,CK含量减少20%,表明这两种菌粉抗疲劳功效明显,能够保证运动员良好的身体状况和精神状况,提高训练效能。 Edible fungi not only has rich edible value,but also it contains rich vitamins and mineral elements.With the advancement of science and technology and the popularization of food deep processing,Three edible fungi powder products of Lentinus edodes,Pleurotus eryngii,Flammulina velutipes have emerged.Aiming at the daily training and physical recovery needs of athletes,through the comparative analysis of the three common edible fungi powders and the control group,the results show that the weight,extended training time,serum lactic acid content,lactate dehydrogenase(LDH)and phosphokinase(CK)content in index analysis,the results show that Pleurotus eryngii has the greatest impact on athletes in prolonging exercise time,and athletes’training time is extremely significant(P<0.01).Although Flammulina velutipes has an effect on reducing LDH in athletes’blood,the effect is not not obvious,the contents of LDH and CK in Lentinus edoues are reduced by about 20%,the content of LDH in P.eryngii is reduced by 33%,and the content of CK is reduced by 20%,indicating that these two bacterial powders have obvious anti-fatigue effects and can ensure good athletes.Your physical and mental conditions can improve training effectiveness.
