摘要
为了对异麦芽酮糖的生产应用及深加工提供参考,利用高效液相色谱法测定异麦芽酮糖溶液在不同贮存温度和时间、pH、活性炭条件下的稳定性。结果表明:异麦芽酮糖溶液对高温、强碱、强酸条件较为敏感,而在适宜的温度、pH条件下延长贮存时间以及添加活性炭处理对异麦芽酮糖溶液的稳定性影响有限。
In order to provide reference for the production,application and further processing of isomaltulose,the stability of isomaltulose solution under different storage temperature and time,pH value and activated carbon was determined by high performance liquid chromatography.The results showed that isomaltulose solution was sensitive to high temperature,strong base and strong acid,while the stability of isomaltulose solution was limited by prolonged storage time and activated carbon treatment under the appropriate temperature and pH value.
