摘要
多酚氧化酶在食品加工生产中具有一定的有益作用。阐述多酚氧化酶的类型、反应机理和底物,总结影响多酚氧化酶活力的主要因素,介绍多酚氧化酶在果蔬生产、茶加工中的应用现状及前景,以期为进一步研究和应用多酚氧化酶提供参考。
Polyphenol oxidase has a beneficial effect in food processing and production.This paper expounds the type,reaction mechanism and substrate of polyphenol oxidase,summarizes the main factors affecting the vitality of polyphenol oxidase,and introduces the application status and prospect of polyphenol oxidase in fruit and vegetable production and tea processing,with a view to providing reference for further research and application of polyphenol oxidase.
