摘要
为了探明新疆种植的糜子氨基酸差异性及营养价值,运用20份糜子材料的17种氨基酸(色氨酸除外)进行含量的测定及组分分析,综合评价糜子氨基酸营养价值。利用茚三酮柱后衍生离子交换色谱法,通过与FAO/WHO氨基酸模式谱和理想蛋白质标准比较,通过计算必需氨基酸比值(RAA)、必需氨基酸比值系数(RC)、必需氨基酸比值系数分(SRC)、必需氨基酸指数(EAAI),对氨基酸含量进行了营养价值评价。结果表明,糜子总氨基酸含量均值为12.83%,必需氨基酸均值为4.78%,胱氨酸的变异最大,天冬氨酸、谷氨酸和苯丙氨酸的变异最小。亮氨酸、异亮氨酸、苯丙氨酸+酪氨酸和缬氨酸含量均高于FAO/WHO氨基酸模式谱。20份糜子的必需氨基酸占氨基酸总量的比值(E/T值)在34%~35%之间,均接近或略低于理想蛋白质标准;氨基酸营养均衡性SRC值在46.49~54.95之间,必需氨基酸指数EAAI值均接近1。20份糜子氨基酸种类齐全,总氨基酸含量较高,必需氨基酸齐全,相对均衡合理,接近人体氨基酸比例。糜子材料的氨基酸含量和营养价值有很大的差异,哈萨克斯坦糜子各氨基酸含量均高于新疆及其他省份的糜子(除了赖氨酸、天冬氨酸、甘氨酸以外)。
In order to explore the amino acid difference and nutritional value of Panicum miliaceum(proso millet)planted in Xingjiang province,the contents of 17 amino acids(except tryptophan)of 20 P.miliaceum were determined and their components were also analyzed to comprehensively evaluate the nutritional value of P.miliaceum amino acids.The essential amino acid ratio(RAA),the essen-tial amino acid ratio coefficient(RC),the essential amino acid ratio coefficient(SRC)and the essen-tial amino acid index(EAAI)were calculated by ninhydrin column derivated ion exchange chromatog-raphy.The results showed that the mean value of total amino acids and essential amino acids in proso millets was 12.83%and 4.78%,respectively.The variation of cystine was the greatest and that of aspartic acid,glutamic acid and phenylalanine was the least.The contents of leucine,isoleucine,phenylalanine with tyrosine and valine were all higher than those of the FAO/WHO amino acid pattern.The ratio of essential amino acids to total amino acids(E/T value)of 20 proso millets was between 34%and 35%,which was and close to or slightly lower than the ideal protein standard.The SRC value of amino acid nutritional equilibrium ranged from 46.49 to 54.95,and the EAAI value of essential amino acid was close to 1.The 20 proso millets have a complete variety of amino acids,with a high total amino acid content and a complete set of essential amino acids,which are relatively balanced and reasonable,close to the proportion of human amino acids.There were significant difference in amino acid content and nutritional value among the 20 proso millets,and the amino acid content of the proso millets from Kazakhstan was all higher than that in China and Xinjiang(except lysine,aspartic acid and glycine).
