摘要
辣椒素作为辣椒中主要的辛辣成分,同时也是重要的生物活性物质。大量的研究表明,辣椒素具有广泛的食用和药用价值,如作为食品添加剂和抗炎、抗癌、抗肥胖、抗疲劳等作用。文章介绍了辣椒中辣椒素作为食品添加剂的应用及其生物活性功能,并探讨了辣椒素的理化性质和相关提取方法,着重论述了其抗疲劳的机理研究,以期为辣椒素的深入研究提供理论支持。
Capsaicin is the main pungent ingredient in Capsicum annuum L.and it is also an important bioactive substance.A large number of studies have shown that capsaicin has a wide range of edible and medicinal values,such as being used as food additive and anti-inflammatory,anti-cancer,anti-obesity,anti-fatigue and other functions.In this paper,the application of capsaicin in Capsicum annuum L.as a food additive and its biological activity functions are introduced,its physical and chemical properties and related extraction methods are discussed,the research progress of its anti-fatigue mechanism is emphatically described,in order to provide theoretical support for the in-depth study on capsaicin.
