不同栽培方式灵芝营养成分和安全性的分析研究 被引量:6

摘要 为探讨林下仿野生和温室栽培灵芝子实体主要营养成分和安全性的差异,以赤芝的子实体为试验材料,对粗蛋白、灰分、粗纤维、粗脂肪等营养物质以及3种重金属元素的含量进行了比较分析。结果显示,温室栽培的灵芝粗蛋白、粗脂肪含量显著高于仿野生栽培灵芝;仿野生栽培灵芝灰分含量达3.398 g/100 g,高于温室栽培(1.488 g/100 g)2.3倍;在粗纤维方面,两者含量无显著差异。温室栽培灵芝可侧重于补充蛋白或用于化妆品方面,林下仿生栽培灵芝可侧重于食药用或保健品研发。仿野生和温室栽培灵芝子实体3种重金属含量均符合现行标准规定,但仿野生栽培的重金属含量均低于温室栽培灵芝,安全性更高。 In order to explore the difference in the main nutritional composition and safety of Ganoderma lucidum fruiting bodies between imitative wild and greenhouse cultivated condition,nutrients such as crude protein, ash, crude fiber, crude fat and 3 heavy metals were analysed and compared with the fruiting bodies of Ganoderma lucidum as test materials. Results showed that the protein and crude fat content in G. lucidum of greenhouse cultivation were significantly higher than that of imitative wild cultivation. The ash content in G.lucidum of imitative wild cultivation was 3.398 g/100 g, which was 2.3 times higher than that of greenhouse cultivation(1.488 g/100 g). There was no significant difference in crude fiber content between the two cultivated conditions. Greenhouse cultivated G. lucidum could be used for protein supplement or cosmetics, while the imitative wild cultivated G.lucidum could be used for food and medicine or the research and development of health products. The contents of 3 heavy metals in fruiting bodies of G.lucidum under the 2 cultivated conditions were in accordance with the current standard. The contents of imitative wild cultivated G.lucidum were lower than that of greenhouse cultivated, so its safety was higher.
