摘要
以福建龙岩3个等级烟叶为研究对象,通过分切处理,研究叶尖、中段和叶基3个分切部位在外观品质、叶片厚度、质量分布、常规化学成分和感官品质的差异。结果表明,从外观品质看,叶中段最好,表现为成熟度好、叶片疏松、油分充足、色度较强。从感官品质看,上部烟叶的叶尖和中段及中下部烟叶中段的感官品质较好。从化学成分看,叶尖、叶中段化学成分与全叶相似。从质量分布和叶片厚度看,叶中段质量占到全叶的45%~50%;叶中段最厚,上部烟叶的叶尖和中段的厚度接近,而中下部烟叶的叶尖和叶基厚度接近。通过分切处理,3个等级烟叶均能截取质量水平明显好于原等级的分切烟叶,其中上部烟叶的叶尖和叶中段综合质量水平较好,而中下部烟叶的叶中段综合质量水平较好。此研究可为烟叶可用性提高、缓解优质原料紧缺提供理论支撑。
The difference in appearance quality,leaf thickness,weight distribution,conventional chemical composition and sensory quality of the leaf tip,middle segment and leaf base of Longyan in Fujian province was studied through cutting treatment.The results showed that the middle segment of the leaves was the best in terms of appearance quality,with good maturity,loose leaves,sufficient oil content and strong color.From the perspective of sensory quality,the upper leaf tip and middle segment of tobacco leaf and the lower middle segment of tobacco leaf have better sensory quality.The chemical composition of tip and middle part of leaf is similar to that of whole leaf.According to the weight distribution and blade thickness,the weight of the middle part of the blade accounts for 45%~50% of the whole leaf.The middle part of the leaf is the thickest,the leaf tip of upper leaf is close to the middle part,and the leaf tip and leaf base of lower middle leaf are close.The quality level of the upper leaf tip and the middle segment of the leaf was better,while the middle segment of the middle segment of the middle segment of the leaf was better.This study can provide theoretical support for improving the availability of tobacco leaves and alleviating the shortage of high-quality raw materials.
