摘要
【目的】建立苹果品质的评价模型,为苹果新品种的引进和筛选提供评价依据.【方法】对甘肃庆阳地区果园栽植的23个着色苹果品种的果实品质指标进行了测定,测定指标有果皮着色指数、可溶性固形物、糖酸比、可滴定酸、花青素、果实硬度、单果质量、维生素C、果形指数.采用层次分析法建立苹果品质的数学评价模型,并结合感官评价进行验证分析.【结果】层次分析法构建的苹果品质评价模型为:Y(综合得分)=0.244 7×果皮着色指数+0.207 5×可溶性固形物+0.172 0×糖酸比+0.102 5×可滴定酸+0.102 5×花青素+0.067 6×果实硬度+0.044 2×单果质量+0.029 4×维生素C+0.029 4×果形指数.【结论】综合评价模型的果实品质得分与感官评审结果有较高的拟合度,证明本模型进行苹果品质评价是可行的.
【Objective】 Establishing the evaluation model of apple quality,to provide a basis for introducing and screening new varieties in the future.【Method】 The fruit quality indices of apples,which 23 colored varieties were planted in orchards of Qingyang,Gansu,were measured.The measured indices contained fruit coloration index,soluble solid content,ratio of sugar to acid,titratable acid content,anthocyanin content,firmness,single fruit weight,vitamin C content,fruit shape index.The mathematical evaluation model of apple quality was established by analytic hierarchy process (AHP) combining with sensory evaluation to validate.【Result】 The apple quality evaluation model constructed by AHP was as: Y (comprehensive score)=0.244 7× fruit coloration index+0.207 5× soluble solid+0.172 0× sugar acid ratio+0.102 5× titratable acid+0.102 5× anthocyanidin +0.067 6× fruit hardness+0.044 2× single fruit weight+ 0.029 4 × vitamin C+0.029 4× fruit shape index.【Conclusion】 There is a higher fitting degree between the score of fruit quality by the comprehensive evaluation model,and the model can be used to evaluate apple quality.
