摘要
大和长芋山药是潍坊市山药主栽品种之一,新鲜山药采挖后容易导致组织变质、腐烂,造成很大的经济损失。试验以大和长芋为试材,首先研究了室温下山药的腐烂速度,接种后的前20d腐烂速度较快,随着温度的逐渐降低,后30d腐烂速度变缓慢,呈现出先快后慢的趋势。分别在室温下和1℃的培养箱中研究了不同比例的石灰泥处理山药切口的腐烂霉变情况,结果表明:以熟石灰∶黏土=2∶5的比例加适量水配置成的石灰泥处理山药切口的效果最好,在室温下处理30d的腐烂霉变率为0,在1℃的培养箱中处理60d的腐烂霉变率为0,适宜的低温可以降低腐烂霉变率,因此在冷库中使用该方法处理山药切口对于减少腐烂霉变的效果最佳。
Japanese yam is one of the main varieties of yam in Weifang City. Fresh yam is easy to be gotten tissue deterioration and decay after digging, causing great economic losses. In the experiment, the decomposition rate of yam was studied at room temperature. In the first 20 days after inoculation, the rate of decay was fast. With the gradual reduction of temperature, the rate of decay became slow in the next 30 days, showing a trend of rapid and slow progress. Decaying mildew of yam incision treated with lime mud in different proportions was studied at room temperature and 1℃ culture box, respectively. The results showed that the best effect was achieved by using the mixture of slaked lime∶clay = 2∶5 and water. After treatment for 30 days at room temperature, the decay rate was 0, and at 1℃ in the incubator for 60 days, the decay rate was also 0. So, appropriate low temperatures could reduce the rate of decay mildew. This method could be best used to treat yam incision in cold storage to reduce decay mildew.
