异叶茴芹总黄酮抗氧化活性研究 被引量:4

摘要 为研究异叶茴芹总黄酮的抗氧化活性,以异叶茴芹为原材料,以超声波辅助提取法提取总黄酮。以Vc为对照,通过羟基自由基、超氧阴离子、还原力、FRAP法测定异叶茴芹总黄酮抗氧化活性,采用分光光度法测定异叶茴芹总黄酮对亚硝酸钠的清除率,利用紫外光解法及比色法测定异叶茴芹总黄酮对亚硝胺的合成阻断率。结果表明:在羟基自由基的清除上,异叶茴芹总黄酮优于同等浓度的Vc,其他3种方法的测定结果显示,Vc的抗氧化活性优于异叶茴芹总黄酮。此外,异叶茴芹总黄酮在较低pH值、一定的浓度和时间内,能够有效地清除亚硝酸钠,在pH值为3.0时,异叶茴芹总黄酮在试验浓度范围内,能有效地抑制亚硝胺的合成。异叶茴芹总黄酮具有较强的抗氧化活性以及抑制亚硝化反应的作用。 In order to determine the antioxidant activity of total flavonoids of Pimpinella diversifolia DC.,the total flavonoids were extracted by ultrasonic-assisted extraction method using Pimpinella diversifolia DC.as the raw material.The antioxidant activity of total flavonoids of Pimpinella diversifolia DC.was determined by hydroxyl radical,superoxide anion,reducing power and FRAP method with Vc as the positive control,the scavenging rate of sodium nitrite was determined for the total flavonoids of Pimpinella diversifolia DC..Furthermore,nitrosamine synthesis inhibition rate of total flavonoids of Pimpinella diversifolia DC.was examined by UV photolysis and colorimetry.The results showed that the total flavonoids of Pimpinella diversifolia DC.were better than Vc of the same concentration on the elimination of hydroxyl free radicals.The measurement results of other three methods showed that the antioxidant activity of Vc was better than Pimpinella diversifolia DC..In addition,the total flavonoids of Pimpinella diversifolia DC.could effectively clear sodium nitrite at low pH,certain concentration and effect time.At pH 3.0,the total flavonoids of Pimpinella diversifolia DC.could effectively inhibit the synthesis of nitrosamines within the experimental concentration range.The total flavonoids of Pimpinella diversifolia DC.had strong antioxidant activity and inhibition ability of nitrification.
