摘要
烘焙食品拥有巨大的发展潜力,烘焙食品专业人才需求也越来越多,"焙烤工艺学"是培养烘焙人才的专业基础课程,其课程设计的合理性对于人才的培养至关重要。本文根据"焙烤工艺学"的理论知识和实验教学内容,结合自身多年的教学经验和体会,对课程设计进行了思考,探索合理的课程设计和教学方法,以激发和调动学生上课和实践的积极性,培养学生创新思维能力和分析、解决问题的能力。
Baked goods have great potential for development,and the demand for baked food professionals is increasing."Baking Technology"is a professional basic course for cultivating baking talents,so the rationality of its course design is crucial for the cultivation of talents.Based on the theoretical knowledge and experimental teaching content of "Baking Technology",combined with the writer's many years of teaching experience,this paper considers the course design and explores reasonable course design and teaching methods,in order to stimulate and mobilize students' enthusiasm for class learning and practice,thus developing their ability to think creatively and to analyze and solve problems.
