摘要 食品与人们的生活密切相关,食品安全问题一直是人们最关注的话题。生活水平的提高使人们对食品品质和食品质量的要求也日益提高,对食品检测技术的研究方向也朝着更加快速、先进的方向发展。近红外光谱技术作为一种先进的检测技术,不仅检测速度快,而且不会对食品造成损害,在食品质量检测方面发挥了非常重要的作用。本文主要探讨了近红外光谱分析在食品掺假、食品原产地快速鉴别以及食品品质和种类鉴别等方面的应用。 Food is closely related to people's life, and food safety has always been the most concerned topic. With the improvement of living standards, people’s requirements for food quality and food quality are also increasing day by day. The research direction of food detection technology is also moving towards a more rapid and advanced direction. As an advanced detection technology, near infrared spectroscopy (NIRS) not only has fast detection speed, but also does not cause damage to food. It plays a very important role in food quality detection. This paper mainly discussed the application of near infrared spectroscopy in food adulteration, rapid identification of food origin, and identification of food quality and types.
