摘要 以酱香型白酒的糟醅为研究对象,考察糟醅水分含量对产酒的产量和质量的影响。对发粮水用量、糟醅水分与堆积发酵、产酒数量及质量关系的分析结果表明,糟醅的水分过高或过低对生产都有影响,水分偏高完成生产任务的机率增大,水分偏低香型酒产量比例大。 The effects of moisture content of distiller's grains and fermented grains of Maotai-flavor liquor on liquor yield and liquor quality were investigated. Through the analysis of the correlations among water use level, moisture content of distiller's grains and fermented grains, stacking fermentation, and liquor yield and quality, it suggested that excessive high or excessive low moisture content of distiller's grains and fermented grains would influence the production of Maotai-flavor liquor (high content might result in high completion rate of production task and low content might result in high yield ratio of Maotai-flavor liquor).
