超声辅助提取冷冻牦牛血中血红素的工艺优化 被引量:2

摘要 为了提高冷冻牦牛血液中血红素的得率,增加牦牛血液资源的利用价值。文中采用超声辅助提取法(ultrasound assisted extraction,UAE)研究了超声温度、超声功率和超声时间3个因素对血红素得率的影响,通过响应面分析优化出超声辅助提取冷冻牦牛血液中血红素的最佳工艺。最优工艺条件为超声时间10. 27 min,超声温度29. 41℃,超声比功率383. 28 W/100 m L,在此条件下血红素的得率为(0. 296±0. 021) g/100 m L,与预测值(0. 280±0. 017) g/100 m L相差不显著,验证了以牦牛血红素得率Y为响应值的多元二次回归模型的可靠性。采用超声辅助提取法能有效增加冷冻牦牛血液中血红素的提取效率。 Heme is given more attention due to extensive use and deep understanding of the natural ingredients in food. Therefore, adding heme to functional foods raises concerns about green and efficient extraction technology. The effects of ultrasonic time, ultrasonic temperature and ultrasonic specific power on the extraction yield of heme were studied by single-factor tests. Response surface methodology was used to optimize UAE conditions of heme extraction from frozen yak blood. The results showed that the best extraction conditions for heme were as follows: the ultrasonic time was 10.27 min; the ultrasonic temperature was 29.41℃ and the ultrasonic specific power was 383.28 W/100 mL . In the validation test, the average extraction yield of heme was (0.296±0.021) g/100mL. The measured value was consistent with the predicted value, which was( 0.280± 0.017) g/100mL. The reliability of the model was proved. The extraction efficiency of heme in frozen yak blood was increased by ultrasonic-assisted extraction.
