摘要 为了解某铁路辖区食堂和伙食团食品安全状况,查找风险隐患,提出完善食品安全监管的措施,对辖区2011—2016年职工食堂、伙食团基本状况统计表和食品安全监督机构《现场检查笔录》《监督意见书》等进行统计分析。结果表明,该铁路辖区食堂和伙食团在3个方面12项指标均存在不同程度的问题,其中食品冷储和食品容器炊具分类标示使用问题最为突出;伙食团存在问题多于食堂;基础设施设备、许可管理等10项指标合格率逐年提高;辖区食品监督机构对伙食团的监管力度逐年加强。最后,指出6年来该辖区食品安全监督管理整体水平逐步提高,但也存在食品冷储不规范、容器用具标示不统一、伙食团硬件不足、食品安全知识培训缺乏等问题,需要从改善硬件、规范管理、加强培训、提高监管效能等方面加强。 In order to understand the food safety situation of canteens and catering groups in a railway area,find out potential risks,and put forward measures to improve food safety supervision. Statistical analysis was carried out on the basic status statistics of staff canteens and catering groups in the jurisdiction from 2011 to2016,as well as the " on-site inspection record"and " supervision opinions"of the food safety supervision organization. The results showed that there were different degrees of problems with the 12 indicators in 3 aspects in the canteens and catering groups of the jurisdiction,among which the problems of cold storage of food and classification and labeling of food containers and cookware were the most prominent. There are more problems in the catering group than in the canteen. The qualification rate of 10 indexes such as infrastructure equipment and license management has increased year by year. The supervision of food groups by food supervision agencies in the jurisdiction has been strengthened year by year. Finally,it is pointed out that the overall level of food safety supervision and management in this area has gradually improved in the past six years,but there are still some problems such as nonstandard cold storage of food,inconsistent labeling of containers and utensils,insufficient hardware in catering groups,and lack of food safety knowledge training. It needs to be strengthened from the aspects of improving hardware,standardizing management,strengthening training,and improving supervision efficiency.
