摘要
建立了三维滤袋法快速测定食品中膳食纤维的方法。样品经粉碎、混匀后过0.3 mm筛,当样品中脂肪含量不低于10%时,按照25 mL/g的比例加入石油醚洗涤;糖含量不低于5%时,按照25 mL/g的比例加入85%乙醇洗涤。采用膳食纤维仪对食品样品进行总膳食纤维、不溶性膳食纤维、可溶性膳食纤维的测定。测定结果的相对标准偏差为0.51%~3.35%;该法(x)与标准法(y)有良好的线性关系,y=0.988 0x+0.079 2,r^2=0.999 0,该法与标准法测定结果的相对误差为–3.75%~4.45%。该法操作简单、快速,结果准确,适用于大批量食品样品中膳食纤维的测定。
A three-dimensional filter bag method was developed for rapid determination of dietary fiber in foods. The samples were crushed and mixed over 0.3 mm sieves. When the fat content of the sample was not less than 10%, the sample was washed with petroleum ether according to the ratio of 25 mL/g. When the sugar content was not less than 5%, the sample was washed with 85% ethanol according to the ratio of 25 mL/g. Determination of total dietary fiber, insoluble dietary fiber and soluble dietary fiber in food samples by dietary fiber analyzer. The relative standard deviations of the results were 0.51%–3.35%. The method(x) has a good linear relationship with the standard method(y), y=0.988 0x+0.079 2, r2=0.999 0. The relative errors between this method and the standard method were –3.75%–4.45%. The method is simple, rapid and accurate. It is suitable for the determination of dietary fiber in large quantities of food samples.
