摘要
明胶是由胶原蛋白热水解制备得到的天然高分子材料。为了提高明胶提取产率,通过酸或碱对明胶原料进行预处理以使致密的胶原结构膨胀。在预处理和提取过程中,胶原蛋白的溶胀和随后的热水解过程中受pH、温度和时间的影响很大。酸和碱处理的另外一种方法是使用蛋白酶对原料进行预处理。与酸和碱处理方法相比,酶处理大大提高了明胶产率,减少了处理时间。本文就明胶的提取工艺对明胶产率和物理性质的影响进行了概述。
Gelatin is a natural polymer material prepared by hydrolysis of collagen. In order to improve the yield of ge- latin, the raw materials were pretreated with acid or alkali to expand the dense collagen structure. During pretreatment and extraction, the swelling of collagen and subsequent thermal hydrolysis are affected by pH, temperature and time. Another method of acid and alkali treatment is to use protease to pretreat raw materials. Compared with acid and alkali treatment, the enzyme treatment greatly improved the gelatine yield and reduced the processing time. In this paper, the effect of the extraction process on gelatin yield and physical properties was summarized.
