摘要
超微粉碎技术是提高小麦麸皮营养成分和经济价值的重要技术手段。小麦麸皮经超微粉碎后能够使外果皮、中间层的纤维状细胞裂解和糊粉层细胞破壁,从而改善膳食纤维的营养特性,充分释放细胞内的营养成分,为小麦麸皮深度开发利用奠定基础。首先对小麦麸皮超微粉碎的基本内涵进行阐述,指出小麦麸皮破碎性能与机理、粉碎方法与设备、粉体特性及应用三者之间的内在关系。其次分析小麦麸皮的组织结构对力学性能的影响,揭示麸皮超微粉碎的破碎机理以及低温粉碎技术对麸皮超微粉碎性能的改进。再次综述超微粉碎常用方法及设备在麸皮超微加工过程中的应用情况,并指出低温振动破碎方法的优越性。然后综述超微粉碎对麸皮理化特性和食用特性的影响。最后指明当前小麦麸皮超微粉碎存在的问题并对未来的研究方向进行了展望。
Superfine grinding technology is an important technical means to improve the nutritional composition and economic value of wheat bran. The fibrous cell of epicarp layer and the middle layers of wheat bran are fractured and the cell walls of aleuronic layer is also cracked though superfine grinding technology so that the nutritional properties of dietary fiber are improved and the nutrients of aleuronic cells are fully released. Superfine grinding technology lays the foundation for the deep development and utilization of wheat bran. The present review was first to expound the basic connotation of wheat bran superfine grinding technology,and the relationship in the breaking performance and mechanism of wheat bran,crushing method and equipment and powder characteristics and its application were also pointed out. Secondly,the influence of the structural characteristics of wheat bran on the mechanical properties was analyzed to reveal the mechanism of wheat bran superfine grinding and improvement of wheat bran superfine grinding performance by low temperature pulverization. Thirdly,the application of ultrafine grinding method and equipment in the process of wheat bran superfine processing was reviewed,and the superiority of low temperature vibration crushing method was pointed out. Then,the effects of superfine grinding on physical and chemical properties and edible characteristics of wheat bran were summarized. Finally,the existing problems were pointed out and the further study of superfine grinding technology wheat bran were prospected.
