摘要
米糠是稻谷加工副产品,具有丰富的营养价值,其膳食纤维含量达25%-40%,是一种较好的膳食纤维来源。以米糠为原料,以挤压后米糠的可溶性膳食纤维(SDF)转化量作为评定指标,就米糠挤压过程中的物料含水量、挤压温度及挤压机螺杆转速进行研究,得出对米糠挤压加工的最佳工艺参数。
In this paper, the content of SDF in rice bran after extruding was studied. The results showed that the moisture of materials, extruding temperature and screw speed had influence on the increase of SDF. Moreover, the best technology was obtained.
