摘要
分别利用商业化的蛋白酶:Alcalase、Protamex 1.5MG和Flavourzyme 500MG对酪朊酸钠进行酶解,再利用截留分子质量为10ku的超滤膜对水解液进行超滤分离,通过高效体积排阻色谱(HPSEC)研究了酪朊酸钠酶解液的分子量分布及超滤分离效果,结果表明,超滤可以对酪朊酸钠酶解液中的混和肽类按照分子量大小进行有效分离。
Sodium caseinate was hydrolyzed with commercial Protamex, Flavourzyme and Alcalase, respectively. The resulting peptides were separated by ultrafiltration (10ku) in terms of molecular weight. The molecular weight distribution of retentates and permeates were identified by HPSEC. The result showed that sodium caseinate could be effectively separated by ultrafiltration.
