摘要
牛油及牛油精深加工产品因其具有良好的稳定性、持气性及特有的纯正风味被广泛应用于食品加工业。作为主要的食用动物油脂,牛油越来越受到人们的关注。从牛油的理化特性、化学成分,现有牛油制备、精深加工技术及其应用进行综述,旨在为牛油产品的进一步开发与利用提供依据。
Beef tallow and its deep processing products are widely used in food industry because of its good stability, gas retention and unique flavor. As the main edible animal fats, beef tallow is getting more and more attention from people. The physicochemical properties and chemical composition of beef tallow were introduced, and the existing extraction, deep processing technology and application were re- viewed in order to provide a reliable basis for further development and utilization of beef tallow products.
