摘要
对6个不同的甘蔗汁进行成分测定,并研究不同甘蔗汁对猴头菇的发酵特性。结果发现,粤选1号蔗糖、维生素E和氨基酸总量最高,黑皮果蔗的果糖、铁元素和锌元素含量最高;粤选1号最适合猴头菇发酵。
To study the fermentation characteristics of Hericium erinaceus using different sugarcane juice, the composition of sugarcane juice of six different clones would be analyzed in this paper. Results showed that Yuexuan 1 had the highest content of total sucrose, vitamin E and amino acid, and chewing cane Badila had the highest content of fructose, iron and zinc. Yuexuan 1 was the most suitable for Hericium erinaceus fermentation.
