摘要
综述了目前淀粉变性的主要方法,包括化学变性、物理变性和复合变性。同时对变性淀粉在医药、食品、纺织等领域的应用进行了分析并对未来的发展趋势进行了展望。变性淀粉的高性能化和性能可调控化将是新一代变性淀粉的追求目标。
The main preparation methods of the denaturated starch are reviewed, including chemical dena- turation, physical denaturation and composite denaturation. At the same time, the application of the denat- urated starch in the fields of medicine, food, textile and so on was analyzed. Moreover, the future develop- ment trend of the denaturated starch was also prospected. High performance and performance tuning con- trol will be the goal of the new ~eneration of the denaturated starch.
