摘要
食品中有毒有害物质可引起人体代谢紊乱,进而导致疾病的产生。近年来由食品中有毒有害物质导致的食物中毒事件层出不穷,引起各国政府、国际组织、学术机构和消费者的高度重视。本文综述了食品中常见有毒有害物质的种类、毒性及危害。
The toxic and harmful substances in food can lead to metabolic disorders and further result in illness. Recently, the frequent occurrence of food poisoning incidents caused by toxic and harmful substances in food has aroused special attention of governments, international organizations, academic institutions and consumers. The thesis reviews the types, toxicity and hazard of the common toxic and harmful substances in food.
