摘要
近年来,我国黄酒行业在继承传统酿造工艺的基础上,积极探索新工艺、新技术、新设备。阐述我国黄酒生产机械自动化技术的发展历程,总结制曲、酿酒、包装等方面的技术原理和应用现状,展望机械自动化技术在黄酒行业中的应用前景和发展方向。
In recent years, based on inheriting traditional brewing technology, Chinese yellow rice wine industry actively explores new craft, new technology and new equipment. On the basis of summarizing the development of yellow rice wine production mechanical automation technology, this thesis emphatically generalizes the technology principle and application status of koji-making, making wine and packaging, and expects the application prospect and development direction of mechanical automation technology in yellow rice wine industry.
