摘要
我国的白酒酿造多采用传统的手工操作工艺,其中的"摘酒"是白酒酿造过程中的一个重要工艺环节。随着社会的发展、技术的进步,白酒生产的机械化、自动化发展必将成为白酒行业发展的大趋势。在对传统工艺中的看花摘酒、分段摘酒以及量质摘酒工艺进行总结的基础上,概述了机械化摘酒工艺的研究现状,并展望了机械化摘酒工艺在白酒行业中的应用前景。
In China, traditional manual operation is commonly adopted in Baijiu(liquor)-making, and liquor-receiving is one of the important technical procedures. With the development of society, the progress of technology, and the mechanization of liquor-making, automation will un-doubtedly become the development trend in Baijiu(liquor)-making industry. Based on the summary of liquor-receiving according to liquor froth, the segment and liquor quality in traditional process, the present research status of mechanized liquor-receiving was described, and the ap-plication foreground of mechanized liquor-receiving was introduced.
