番薯还原糖和总糖含量的测定 被引量:7

Determination of Reducing Sugar and Total Sugar in Sweet Potato

摘要 为了测定比较不同品种番薯的含糖量,以两种番薯品种(紫心番薯、白心番薯)为材料,利用3,5-二硝基水杨酸(DNS)比色法分别测定其还原糖和总糖的含量。结果表明,紫心番薯的还原糖含量是11.69%,白心番薯的还原糖含量为7.94%,还原糖含量紫心番薯高于白心番薯;而它们的总糖含量分别为:21.30%、16.05%,紫心番薯的总糖含量仍高于白心番薯的总糖含量。为不同品种番薯后期的合理加工利用提供参考。 The contents of reducing sugar and total sugar in sweet potato were determined by 3, 5 - two nitro sali- cylic acid (DNS) . Results showed that reducing sugar content of purple sweet potato was 11.69%, reducing sugar content of sweet potato was 7.94%. Reducing sugar content of purple sweet potato was higher than that of purple sweet potato. The total sugar content of them was 21.30% and 16. 05%. Total sugar content of purple sweet potato was still higher than that of purple sweet potato. These data provided reference for the rational processing and utili- zation of different sweet potato varieties at the later stage.
