低温预贮及自发气调对豇豆冷害的控制 被引量:8

Effect of Low Temperature Conditioning and Modified Atmosphere on Chilling Injury of Postharvest Cowpea

摘要 以豇豆为试材,采用低温预贮(low temperature conditioning,LTC)和自发气调(modified atmosphere,MAP)保鲜的方法,研究了LTC+MAP处理对豇豆冷害控制的影响。结果表明:LTC+MAP处理能够较好地维持豇豆的外观品质,延缓其水分、可溶性固形物、抗坏血酸等物质的损失,抑制豇豆的相对电导率和丙二醛(MDA)含量的上升,保护细胞膜的完整性,除此之外还能够提高其过氧化物酶(POD)活性,进而增强自身的抗氧化能力。 Cowpea was used as test materials,and were treated with LTC+MAP to determine the effect of LTC+MAP on chilling injury of cowpea by low temperature conditioning(LTC)and modified atmosphere(MAP).The results indicated that LTC+MAP kept higher sensory score,inhibited increase of MDA content and weight loss,and enhanced TSS content,vitamin C content,POD activity.LTC+MAP exerted the best preservation.
