天然抗菌肽及其在食品工业中的应用 被引量:3

摘要 抗菌肽(AMPs)是广泛存在于自然界生物体中的一种小分子肽类物质,可抵抗细菌、真菌及病毒等致病因子,具有高效和广谱等杀菌特性,且不易产生耐药性,可作为化学防腐剂的理想替代品,具有良好的研究价值与应用前景。试验对天然抗菌肽的来源、作用机制及其在食品工业中的应用进行综述和展望。
