摘要
基质辅助激光解析电离飞行时间质谱(MALDI-TOF MS)作为一种新颖的质谱技术,其在生物大分子检测、微生物筛选鉴别等方面得到了广泛的应用。该技术可对肉制品中的蛋白、多肽等物质进行鉴定,并可从分子层面探讨肉在不同外界条件下品质变化的机理,故其在肉品科学研究中具有广阔的应用前景。介绍基质辅助激光解吸电离飞行时间质谱的基本原理,综述其在肉品品质分析等方面的应用,并对该技术在未来肉品科学研究中的前景进行了展望。
As a novel mass spectrometry method,matrix assisted laser desorption time of flight spctrometry(MALDI-TOF MS) technique has been widely used in the separation and recognition of biomacromolecule and micobial.MALDI-TOF MS technique can be used to appraise proteins and peptides in meat,the technique has good application prospect in meat science because it can analyze meat quality change mechanism in different environmental conditions.The principle of MALDI-TOF MS technique is introduced briefly,quality appraisal of meat by MALDI-TOF MS technique are reviewed,and look into the future of the applications of this technique in meat research.
