MALDI-TOF MS在食品掺假鉴别研究中的应用

摘要 基质辅助激光解析电离-飞行时间质谱(MALDI-TOF MS)主要通过对特征性标志物筛选和构建数据模型实现食品掺假鉴别,在乳制品、肉与肉制品、水产品、食用油、蜂蜜等掺假高风险食品中研究广泛,针对品种、产地、季节等均可实现有效区分,因其前处理简单、检测范围广,具备巨大的应用潜力。该文对MALDI-TOF MS技术在食品掺假中典型的研究成果进行整理,对不同食品中的研究路线和方法进行概述。 Matrix-assisted laser desorption ionization time-of-flight mass spectrometry(MALDI-TOF MS)mainly realizes the identification of food adulteration by screening characteristic markers and building data models.It has been widely used in milk,meat and meat products,aquatic products,edible oil,honey and so on,which are high-risk adulteration foods.Food can be effectively distinguished according to variety,origin,season and so on by MALDI-TOF MS.Because of its simple pretreatment and wide detection range,it has great application potential.In this paper,the typical research results of MALDI-TOF MS technique in food adulteration are summarized,and the research routes and methods in different foods are summarized.
