摘要
丢糟是传统白酒酿造的主要副产物,丢糟中富含粗淀粉、粗蛋白、粗脂肪、粗纤维和氨基酸等营养成分。丢糟的丢弃,不仅会产生严重的环境污染,也会造成极大的资源浪费。就近年来关于白酒丢糟资源综合利用的研究进行了综合阐述,包括生产丢糟曲、丢糟酒、调味品、栽培食用菌以及生产燃料棒等,为白酒丢糟的利用提供一定的参考。
Waste distillers grains, the main by-product in traditional liquor production, contain rich crude starch, crude protein, crude fat, crude fiber and amino acids. The dropped waste distillers grains will not only result in serious environmental pollution, but also cause huge resource waste. In this paper, the comprehensive utilization of waste distillers grains in recent years was elaborated including the use of waste distillers grains for the production of Daqu, liquor, condiment, for edible mushroom cultivation, and for fuel rods production etc., which provided useful reference to the utilization of waste distillers grains.
