摘要
丢糟是酿酒生产的副产物,除含有8%~12%的残淀、60%以上的水分和一定量的糠壳外,还含有一定量的酸、酯、醇、醛等有机物质,有利于微生物的生长。用丢糟代替部分小麦生产大曲试验结果表明,丢糟曲的糖化力、液化力比大曲高,丢糟曲感官和理化指标表明其质量均达到一级曲的质量标准。用丢糟制曲有利于对于筛选、驯良微生物菌种,防止杂菌侵入,提高了曲的酶活力,降低制曲生产成本。
Waste distiller's grains is the byproduct in liquor-making and it contains multiple organic substances including acids, esters, alcohols and aldehydes except 8 %- 12 % residual amylum, 60 % water and certain quantity of husks which are helpful for the growth of microbes. The experiments of the use of waste distiller's grains instead of part of wheat for Daqu production suggested that Daqu produced by waste distiller's grains has stronger saccharifying power and liquefying power and the sensory indexes and physiochemical indexses of the produced Daqu meet the quality standards of first grade Daqu. The use of waste distiller's grains for Daqu production is good for the screening and domestication of bacterial species, the prevention of bacterial invasion, the improvement of the enzyme activity of Daqu, and the reduction of Daqu production cost.
