摘要
以不同含水量(17%,14%,11%,8%,6%,4%,2%)的石研3号油莎豆块茎为材料,常温下密闭贮藏9个月,通过对油脂含量、主要脂肪酸含量、酸值、过氧化值、碘值进行测定,研究不同含水量贮藏对油莎豆块茎中油脂的影响。试验结果表明,当含水量低于8%时,油莎豆块茎中的油脂含量可以保持在较高水平,主要脂肪酸的氧化程度较小,油脂品质较好。
It was used the Shiyan NO.3 tuber of Cyperus esculentus L. with different moisture content (17%, 14%, 11%, 8%, 6%, 4%, 2%) as experimentat material, room temperature airtight storage for 6 months to analyze the oil content, main fatty acids content, acid value, peroxide value and iodine value, in order to study the effect of different moisture content on the oil of Cyperus esculentus L, The result showed that when the moisture content in seeds was lower than 11%, the content and quality of oil was better.
