摘要
本文以河套蜜瓜(Cucumis melo L.cv Hetao)为材料,通过控制磁场处理时间来测定其品质的变化.分别将河套蜜瓜在相同磁场强度中处理0,5,10,15 min,在常温下贮藏0,3,6,9,12,15 d后,对其外观品质、失重率、可溶性固形物含量、可溶性蛋白含量、还原性糖含量、Vc含量进行测定.研究结果表明:在磁场中处理10 min时,河套蜜瓜的外观品质较好,可溶性固形物含量相对较高,还原性糖含量变化较小,可溶性蛋白含量较高,Vc损失少,失重率曲线较为平缓,可以有效的延长河套蜜瓜的贮藏时间,减少在采后贮藏过程中的损失,提高其食用品质和商品价值.
Cucumis melo L. cv Hetao was used as experimental material to investigate the quality change after its treatment with the magnetic field. Firstly,Cucumis melo L. cv Hetao were put into a magnetic field treatment instrument for the self-made fruit and vegetable,and treated for 0,5,10,and 15 min with the same alternating magnetic field produced,respectively. Then they were stored at room temperature for 0,3,6,9,12,15 d. Appearance quality,rate of weightlessness reducing,soluble solids,sugar content,Vc and soluble protein content were determined. The results showed that Cucumis melo L. cv Hetao treated in magnetic field for 10 min resulted in better appearance quality,higher soluble solids and soluble protein content,delayed sugar content change,less Vc lost,and less weightlessness. Therefore,10 min treatment in magnetic field presented beneficial effects on reducing postharvest responses,delaying ripening in Cucumis melo L. cv Hetao,and improving its edible quality and commodity value.
