新疆桑叶营养成分分析及体外抗氧化作用研究 被引量:11

Nutrient Analysis and in Vitro Anti-oxidative Effects of Mulberry Leaves from Xinjiang Province

摘要 为评价新疆和田地区桑叶品种的营养品质特性,测定该地区20个桑叶品种的基本营养成分(水分、灰分、粗蛋白、粗纤维、粗脂肪、VC、总酸、总糖、还原糖和8种矿物质),并比较桑叶粗多糖及总黄酮的体外抗氧化能力。结果显示,不同品种桑叶在营养组成上存在较大差异。桑叶总黄酮具有较强的清除DPPH·(IC50=0.036mg/m L)和·OH(IC50=0.706 mg/m L)能力,桑叶粗多糖对·OH具有较强的清除能力(IC50=0.570 mg/m L),而对DPPH·的清除能力(IC50=0.235 mg/m L)较弱。试验结果为促进新疆桑叶资源的综合利用提供科学依据。 The chemical composition of 20 kinds of mulberry leaves from Xinjiang Hetian were tested, including water, ash, crude protein, crude fiber, crude fat, vitamin C, total acid, total sugar, reducing sugar and eight minerals. And the in vitro antioxidant capacities were compared between crude polysaccharides and the total flavonoids. There are differences on the nutrient composition among different varieties of mulberry leaves. Mulberry total flavonoids have strong scavenging DPPH · (IC50=0.036 mg/mL) and · OH (IC50 values were 0.706 mg/mL) capability. Mulberry crude polysaccharides have strong scavenging DPPH · (IC50 values were 0.235 mg/mL), while the DPPH · (IC50=0.235 mg/mL) scavenging capacity is weak, These results have provided a scientific basis to promote the comorehensive utilization of mulberry resources in Xinjiang.
