五粮液大曲中嗜热红曲霉的筛选及初步研究 被引量:2

摘要 从五粮液大曲中筛选到1株嗜热产红色素霉菌,通过理化性能测定,形态分析,该株菌为一种嗜热红曲霉,命名为MH-1。该菌生长温度范围35 60℃,最适生长温度45℃。最适pH值为5,最低可耐受的pH值为3,酯化酶活可高达280 U。 A thermophilic red pigment-producing mold strain was separated from Wuliangye Daqu. Physiochemical properties measurement and morphological analysis suggested such strain was a kind of thermophilic Monascus, and then it was named MH-1. The growth temperature of such strain ranged from 35℃to 60℃, and its optimum growth temperature was at 45℃.Its optimum growth pH value was 5, and the low-est tolerable pH value was 3. And the activity of its esterifying enzyme was as high as 280 U.
