摘要
将从中国工业微生物菌种保藏管理中心所购买的红曲霉菌株(菌种编号40268)扩大培养后,用于包包曲的生产中。结果表明,除发酵力红曲霉强化大曲略低于普通大曲外,酸度、糖化力、液化力、酯化力略高于普通大曲,而蛋白分解力更是接近普通大曲的2倍。该实验效果显著,达到了预期目标。
After amplified Monascus 40268 bought from China Center of industrial Culture Collection,the culture was applied in the production of Luzhou-flavor Daqu.The result indicates that fermentation ability of Monascus Daqu is a little lower than normal Daqu but the acidity、diastatic power、liquefying power、esterifying power are a little higher than the normal.Protein-degradation power is twice as much as the normal Daqu.The effect is significant and achieves the expected target.
