摘要
介绍了红曲的特点及其在我国白酒生产中的应用。以红曲在牛栏山酒厂的应用为例,对红曲基酒与普通基酒的各项指标进行分析。结果表明,红曲基酒总酸、总酯均提高0.05g/L;红曲基酒乙酸乙酯含量提高,乳酸乙酯含量降低。品酒结果表明,红曲基酒的香气和口味得到明显改善。
The properties of monascus and its application in liquor production in China were introduced. As an example, its application in Niulanshan Distillery was studied. Each index in monascus base liquor and in common base liqour was analyzed. The results suggested that total acids content and total esters content in monascus base liquOr increased by 0.05 g/L, and ethyl acetate content also increased but ethyl lactate content decreased. Besides, liquor tasting results showed that the aroma and the taste of monascus base liquor got improved evidently.
