摘要
选取贵州麻江引种的5个蓝莓品种,分别运用高效液相色谱法、p H示差法、比色法对不同品种蓝莓花色苷进行定量检测。结果表明:各品种蓝莓花色苷(以矢车菊-3-O-葡萄糖苷做对照计算求得的结果)的相对含量与不同方法所测定结果变化趋势基本一致,高效液相法测得结果含量较高,比色法次之,p H示差法最低;不同品种的花色苷组分和其含量各不相同,其中,矢车菊素-3-O-葡萄糖苷在所检测的5个蓝莓品种的花色苷组成中,含量均未超过10%,说明矢车菊-3-O-葡萄糖苷含量较少。
In this paper, the HPLC, pH differential and colorimetric methods are used to quantificationally detect the blueberry anthocyanin content in five varieties of bluebeeries in Majiang county of Guizhou province. The results show that the relative contents of different varieties of blueberry anthocyanin are consistent trend in different meas- urement methods. The result of HPLC method is the highest, followed one is that in the colorimetric method, and the result of pH differential method is the lowest. In the different varieties, the components and contents of anthocy- anin are different, among them the content of cyanidin-3-O-glucoside in anthocyanin composition of the five blue- berry varieties is not more than 10 %, where the content of cyaniding -3-O-glueoside is less.
