澄清剂对蓝莓果酒理化指标的影响 被引量:2

摘要 研究了硅藻土、大孔树脂、聚乙烯吡咯烷酮对蓝莓果酒理化指标花色苷、酚类、总糖、总酸、色泽的影响,结果发现三种澄清剂均会不同程度影响蓝莓果酒的理化指标,其中大孔树脂除对总糖含量影响相对较小外,对其他指标影响最为明显;聚乙烯吡咯烷酮对总酸和色泽的影响最小,而硅藻土对总酚和花色苷含量影响最小。 The effects of diatomite,macroporous resin and polyvinylpyrrolidone on the physical and chemical indexes of blueberry wine were studied,such as anthocyanins,phenols,total sugar,total acid and color. The results showed that the three clarifiers could affect the physical and chemical indexes of blueberry wine in varying degrees,among which macroporous resin had the most obvious effect on other indexes except the content of total sugar,and polyvinylpyrrolidone had the most obvious effect on the total acid. The effect of diatomite on the contents of total phenols and anthocyanins was the least.
