摘要
猪皮中富含胶原蛋白质,其具有良好的保健和美容功效。着眼于食品的健康,试验以猪皮作为外层包裹材料,中间填充滚揉腌制的肉泥,制作呈透明状,内容物呈淡粉红色且弹性良好、嚼劲十足的水晶肘花火腿。以猪4#肉、鸡肉和猪皮为主要原料,原料肉比例、猪皮添加量和蒸煮时间三个因素进行单因素和正交试验。所得水晶肘花火腿的最优生产工艺为:猪肉与鸡肉比例1∶1.25、猪皮添加比例35%、蒸煮时间100min。试验所生产的产品充分地利用了廉价猪皮为原料,富含胶原蛋白质,具有优良的口感、风味和保健功效。
Pig skin has rich collagen protein,health function and beauty effect. Food healthier was focused on in this paper. Pigskin was taken as the outer packing material,and filled with pickled meat mud in the middle. The crystal elbow ham product was obtained. It was transparent,light pink contents, good elasticity and chewy. 4# pork meat,chicken and pigskin were taken as the main material. Ratio of raw meat,addition of pigskin and cooking time were carried by single factor and orthogonal experiment. The result showed that the ratio of pork and chicken,addition of pigskin and cooking time was1∶ 1. 25, 35% and 100min,respectively. The product made full use of the cheap raw material pigskin and had rich collagen protein,excellent taste and flavor and health benefits.
