摘要
以合肥、苏州、海门等地的20家中高档餐饮企业为研究对象,对比餐饮企业引入5S管理前后,酒店的卫生状况、员工和顾客的满意率等。发现实施5S管理后,餐饮食品熟制肉食合格率提高了52%和37.5%,餐具、刀具、抹布、砧板、手部清洁的卫生合格率分别提高了144.81%、193.55%、404.31%、324.06%、42.11%;另外,员工工作效率、厨房卫生状况、菜肴成本控制也有显著提高;而员工餐饮食品安全意识和顾客满意率提高并不明显。"5S"管理模式实施后,餐饮食品安全合格率显著提升,应在餐饮企业中加强推广。
Take 20 high-grade catering enterprises as the research object in hefei,suzhou and haimen,compare hotel hygiene condition,employee and customer satisfaction before and after the introduction of 5 s management,we found that after using 5s management,food cooked meat yield is increased by 52% and 37. 5%,cutlery,knives,rags,chopping block,hand clean hygiene rate by 144. 81%,193. 55%,404. 31%,324. 06%,404. 31%; besides,employees’ work efficiency,kitchen hygiene,food cost control have increased significantly; while employee food safety awareness and customer satisfaction rate increase is not obvious. Since restaurant food safety qualified rate significantly increased,the implementation of 5s management should be promoted.
