介绍了超高压食品加工技术的发展历史、技术优势及应用机理 ,就该项技术的关键——超高压设备的研制现状、结构特点和设计方法进行了论述 ,并对其应用前景进行了展望。
This paper introduces the development and technology priority of super high pressure food processing,as well as the application mechanism of this technique.It describes the key technique structures,design methods and current research situation of the super high pressure food processing equipment.It also previews the application prospect of this technology.
