摘要
研究了甜玉米采后经压差预冷从初温28.2℃降至2.9℃,微孔薄膜袋和纸箱包装0℃冷藏运输1 d后,采用四种模拟销售方法销售2 d对其品质的影响。四种销售方法分别为4℃+聚氯乙烯(PVC)伸缩膜包装、4℃无膜包装、20℃+PVC伸缩膜包装和20℃无膜包装销售。结果表明:甜玉米品质低温下薄膜包装销售比高温下无薄膜包装好;四种销售方法相比,4℃+聚氯乙烯(PVC)伸缩膜包装是甜玉米的最佳销售方法,其感官评价最高,失重率和营养成分损失最少;销售2 d后的甜玉米感官评价、失重率及营养成分可溶性糖、维生素C和可溶性蛋白含量分别为8.1、1.76%、14.74%、121.74 mg/100 g、16.24 mg/g。
The effects on the quality of sweet corn were studied after forced-air cooling from 28. 20 to 2. 90 ℃, 1 day transportation with carton and microporous film bag at 0 ℃ and four different retailing methods for 2 days. The retailing methods included 4 ℃ with stretch polyvinyl chloride ( PVC) flim packaging, 4 ℃ without packaging, 20 ℃ with stretch PVC flim packaging and 20 ℃ without packaging. The results showed that the quality of sweet corn retailed in low temperature with film was better than that in high temperature without film, the quality of sweet corn packed at 4 ℃ with PVC film was better than others, its sensory evaluation was highest, the loss of weight and nutrients was minimum. The sensory evaluation, weight loss, soluble sugar content, Vc content and soluble protein content of sweet corn after 2 days retailing were 8. 10, 1. 76%, 36. 40%, 121. 74mg/100 g and 16. 24 mg/g, respectively.
