摘要
山药是一种具有营养保健功能,富含淀粉的食药材。对山药中主要活性物质的提取与分离纯化方法、药理作用及山药酒的发酵技术进行了综述,并对山药的发展前景做了展望。
Chinese Yam, as an edible and medical plant, contains rich starch and has high nutrition and healthcare functions. In the paper, the extraction, separation and purification of the main active substances of yam and their pharmacological activities, and the fermentation technology of yam wine were summed up. Besides, the development foreground of yam was described.
