摘要 以‘巴西’香蕉 (Musanana‘Baxi’)为材料 ,研究了冷激处理对果实常温下后熟软化的影响。结果表明 ,-2 0℃冷空气处理 2 .5h明显延迟了后熟软化 ;同时也延缓了多聚半乳糖醛酸酶 (PG)和淀粉酶活性上升 ,进而抑制了果胶和淀粉的降解 ,对维持香蕉硬度起重要作用。 The effect of cold shock treatment on softening of postharvcest 'Baxi' bananas was investigated. The results showed that the treatment of -2-0℃ cold air for 2.5h significantly delayed fruit softening. Cold shock treatment inhibited the activities of polygalacturonase and amylase, and delayed the degradations of pectin and starch which resulted in a delay in fruit softening and a maintainance of fruit firmness. However, cold shock treatment did not affect the pectinesterase activity which decreased gradually during fruiting softening.
