摘要
本实验以绿熟期的渝抗2号番茄(var.communeBailey)为材料,0℃的冰水混合物为冷却介质,研究了不同冷冲击强度(1h,2h,3h,4h)对番茄果实贮藏效果的影响,对贮藏期间番茄红素含量、失重率、腐烂率等指标进行了分析,并获得了一种较适合本品种番茄的冷冲击处理条件.
The material in this experiment was mature green tomatoes(var.Commune Bai-ley).The tomatoes treated with ice water(0℃)for different time(1h,2h ,3h,4h)then storedat room temperature were used to study the influence of cold shock treatment on storage ef-fect.During storage,indexes such as tomato red pigment,weight loss percentage and decay per-centage were measured and analysed,and a suitable condition was obtained.
