通过试验在确定了啤酒糟蛋白质的等电点后 ,采用醇 -碱法提取啤酒糟中的蛋白质 ,得到了一种合理的提取工艺 ,使啤酒糟中蛋白质的提取率达 45 .48%
After determinating the iso-electric point of protein in brewer's spent grain, the protein could be extracted from brewer's spent grain by alcohol -alkali. This is a reasonable extraction technology, so the extract rate of protein in brewer's grain can be up to 45.48%.
